Baked Chicken Cordon Bleu

My husband really loves this chicken cordon bleu sandwich from a specific sandwich shop in Fargo, ND. But, we live in Texas, not Fargo! He likes that sandwich for 2 reasons: the bread and the honey dijon mustard. Well, I have yet to find store bought bread that is similar, but he says this baked chicken cordon bleu recipe comes close to reminding him of his favorite sandwich. I bake mine with a crunchy, bread crumb topping.

IngredientsBaked Chicken Cordon Bleu

4 chicken breasts
4-6 tsp honey dijon mustard
8 thin slices of ham
4 thin slices of swiss cheese

For topping:
1 egg
2 Tbsp milk
1 Tbsp salt
1 tsp dried parsley
1/2 c. bread crumbs
1 tsp. powered garlic

Directions

Preheat oven to 350.

Pound the chicken breasts to about 1/2 inch thick.

Spread 1-2 tsp of honey mustard on one side of the chicken breasts. I put the skin side down because when you roll them up, they tend to stay rolled up better.

Place 1 slice of swiss cheese on each chicken breast. Then, add 2 slices of thin sliced ham.

Roll up each chicken breast and use toothpicks to secure.

For topping: in 1 bowl, mix together egg, milk, salt and parsley. In another bowl, mix bread crumbs and garlic.

Dip the top (not the seam side) in the egg mixture. Then, dip into the bread crumbs. Place seam side down on a non-stick pan.

Bake at 350 for 20-25 min. Then, broil another 5 min to brown the topping.

Tips

– To pound out the chicken, I put it in a gallon size seal-able bag. Squeeze as much air out as I can before I seal it. Then, use a rolling pin or a meat mallet to pound the chicken. The bag keeps the mess contained.
