Decadent chocolate sandwich cookies can be filled with your favorite filling. I used chocolate ganache and peanut butter to fill mine. Other filling ideas are jam or marshmallow cream. The cookies are firm, but still chewy. With chocolate ganache, the double dose of chocolate make them extra rich and delicious.
2 c plus 2 Tbsp flour
1/2 c. unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 c. (2 sticks) softened butter
1 3/4 c. sugar
1 large egg
2 tsp vanilla extract
1/4 c. heavy whipping cream
3 Tbsp. hot water
Sift together dry ingredients (flour, cocoa, baking soda, salt). In a separate bowl, beat together butter and sugar until smooth and fluffy. Add in egg, vanilla, cream and hot water until combined. With mixer on low, combine dry ingredients.
Make tablespoon-size balls of dough and space them about 3 inches apart on a baking sheet. Bake at 350 for about 10 minutes. The cookies with flatten out. You want them to be firm.
Let cool before adding filling:
1/2 c. chocolate chips
1/2 c. heavy whipping cream
Melt together in a double boiler. Smear on flat side of 1 chocolate cookie. Top with another chocolate cookie.
Peanut Butter Filling
3/4 c. peanut butter
4 Tbsp softened butter
1/4 c. powdered sugar
Mix all ingredients together. Smear on flat side of 1 chocolate cookie. Top with another chocolate cookie.
