Recipe: Pumpkin Spice Cupcakes with Caramel Cream Cheese Icing

Pumpkin season is here! In the fall, I always {over}indulge in anything pumpkin. These Pumpkin Spice Cupcakes are so easy. They are guaranteed to be a hit at your next Halloween party, School or church bake sale or Thanksgiving dinner. Only 3 ingredients for the cupcakes make it quick and easy. Since I am using a box mix for the cupcakes, I like to make my own cream cheese icing, but you can certainly top with Pumpkin Spice Cupcakes with Cream Cheese Caramel Icingstore bought icing.

Cupcake Ingredients

1 16 oz can of pumpkin
1 box Spice Cake mix
3 eggs

Directions

Preheat oven to 350. Spray or line your muffin pan. Combine all ingredients in a bowl until well mixed. Fill muffin cups about 2/3 full. Bake for 14-16 minutes or until golden brown. Let cool. Top with cream cheese frosting (recipe below).

Caramel Cream Cheese Frosting

1 ½ c powdered sugar
4 oz cream cheese, softened
4 oz butter, softened
2 tsp caramel flavored extract

Combine all ingredients until well mixed.
