Beef Taco Tortellini Stew

My desire for cooler weather inspired me to make this hearty Beef Taco Tortellini Stew. In Texas, temperatures remain at Summer levels until late October. Three days into “Fall”, temperatures are still in the high 90s, and we are still swimming in our pool! It was a bit chilly. My kids swam until their lips were blue and their skin covered in goose bumps. Then, we went inside and ate hearty Beef Taco Tortellini Stew to warm us up!

As sure as we are that Summer lasts until mid-Autumn, we are sure that the cold weather will be upon us soon. Well before the cooler temperatures arrive, I crave soups and stews. Comforting, warm and easy, stew is the perfect meal for fall!

 

Busy with school and all those evening activities, I long for an easy slow cooker meal that fills the house with its delicious smell. This soup is a delicious blend of beans, veggies and stew meat. The slow cooker really develops the beefy flavor of the stew and tenderizes the meat. My picky eaters ate this up in no time, even with the carrots and tomatoes in it.

Beef Taco Tortellini Stew

1 lb. beef cubes or beef stew meat
15.5 oz. can of black beans, drained and rinsed
10 oz. bag frozen super sweet corn
14.5 oz. can of diced tomatoes and chiles
1/2 lb. carrot, peeled and diced
1 package of taco seasoning (We use Taco Bell brand)
6 c. beef broth
4 oz. package of cream cheese
1/2 c. milk
1 10 oz. package refrigerated cheese tortellini

Directions

Mix all ingredients except milk and tortellini together in a slow cooker. Cook on low for 4-6 hours.

30 minutes before serving add in milk and tortellini. Continue to cook on low until tortellini is softened.

Notes: For a soupier consistency, omit the cream cheese.
