One Pan Chicken with Garlic Lemon Sauce

I get asked a lot how I know what recipes to make for my blog. I get inspiration from recipes that I have known or my husband has known since childhood. Recipes that we have tried and perfected for the last 10+ years. I am also inspired by produce that is in season or on sale. That is what inspired my Molasses Chicken and Butternut Squash from last week.

Chicken with Garlic Lemon Sauce is one of my husband’s recipes that I had to modify and have been trying to perfect for a while. When I met my husband, he loved Lemon Pepper Chicken. He wanted to cook it at least 3 times a week! But, I HATE pepper. I do not like the smell or the taste.

I wanted to make a Lemon Chicken that he and I could both enjoy. This recipe does not have any pepper, but he dumps pepper on it when he is ready to eat.

The nice thing about this garlic lemon sauce is that it is really versatile and can be used on fish or shrimp also. And you can serve it over rice or pasta.

Chicken with Garlic Lemon Sauce

4-6 boneless, skinless Chicken Thighs or Chicken Breasts

For Garlic Lemon Sauce:

1 Tbsp. crushed garlic
1 Tbsp. butter
1 Tbsp. flour
1 tsp. dried thyme
1 tsp. dried parsley
1 tsp. dried lemon peel
1/4 c. white wine
1/4 c. lemon juice
1 c. chicken broth

Recipe Directions

Brown chicken and remove from pan.

Add garlic and butter to the pan. Let cook for about 2 min. Then add flour and cook for another 2 min. Stirring constantly.

Add thyme, parsley, lemon peel, white wine, lemon juice and chicken broth. Cook until bubbly. Add chicken to sauce. Simmer 5-10 min.
