Pumpkin Spice Monkey Bread

Monkey bread is such an easy, delicious breakfast. It reminds me of cinnamon rolls, but much easier to prepare. I decided to take it one step further to make this easy, delicious, Pumpkin Spice Monkey Bread.

At the end of August, I was in the drive through lane at a certain coffee place and asked “Is it time for the Pumpkin Spice Latte yet?” The barista actually laughed at me! “It is way too early for that,” she said.

WAY too early? As soon as the weather turns a bit cooler, I start browsing the grocery store for pumpkin flavored stuff. I love it. Now is the time. And here is my latest pumpkin recipe. Pumpkin Spice Monkey Bread

1 can of refrigerated biscuits, cut into 1 inch chunks
1/4 c sugar
1/2 tsp. cinnamon
1/4 c canned pumpkin puree
1 tsp. pumpkin pie spice
1/4 c. brown sugar
1 stick of butter, melted

Directions

Preheat oven to 350. Spray a bundt cake pan with cooking spray.

In a bowl, add cut up biscuits, sugar and cinnamon. Mix with a wooden spoon or your hands until biscuits are coated with sugar and cinnamon.

In a separate bowl, combine pumpkin, pumpkin pie spice, brown sugar and melted butter. Pour over biscuits. Mix with wooden spoon or hands until covered with pumpkin mixture.

Pour into prepared bundt pan. Bake at 350 for 25 minutes, until pumpkin mixture is bubbly. Let cool for 5 min. Serve.

I love this with a cup of coffee for breakfast. The bread will keep in airtight container for up to 1 week. I microwave it for a few seconds to warm it back up.

My kids actually do not like pumpkin spice stuff very much, but pumpkin has a lot of nutrients and vitamins that are good for them. If I omit the pumpkin pie spice, they will eat it, but it won’t have that signature pumpkin flavoring.
