Best Caramel Brownies

Making homemade brownies is a lot easier than you might think. With a few ingredients you probably already have in your pantry, you can bake up some delicious brownies in no time. I kick my brownies up a notch with a layer of chocolate chips and creamy caramel. When I make these, my friends always inhale them saying “These are the best caramel brownies ever!”

These caramel brownies have a rich, dense texture. The coffee flavored liqueur in these intensifies the chocolate and caramel. Caramel and chocolate chips layered into these brownies make a delicious treat!

 

Setup your own Double Boiler

For this recipe, I setup a double boiler type system because I use that to melt the butter and the caramels. Start by boiling water in a medium sauce pan and then use mixing bowls as the “top” of the double boiler, make sure the mixing bowl bottom is large enough to fit over the medium sauce pan. The bowl should not touch the water.

Sometimes, it is difficult to find soft caramels in the store. If you have trouble finding them, you can substitute Creamy Caramel Dip (the kind you find in the produce section) for the whipping cream and the caramels. No need to melt the whipping cream and caramels together.

The Best Caramel Brownies

½ cup butter
1 cup white sugar
2 eggs
1 ½ tsp Kahlua or coffee liqueur
1/3 cup unsweetened cocoa powder
½ cup all purpose flour
¼ tsp salt
¼ tsp baking powder
20 caramels
¼ cup heavy whipping cream
1 10 oz bag of chocolate chips (I used Triple Chocolate)

Directions

Preheat oven to 350.

Melt  ½ cup of butter in a medium mixing bowl over bowling water. Remove from heat and blend in sugar, eggs and coffee flavored liqueur.

In a separate bowl, whisk together cocoa powder, flour, salt and baking powder. Mix dry ingredients into the wet ingredients.

Spread half of the brownie mixture into a small greased baking dish. The mixture is very thick. Use a spatula to spread it out with a spatula.

Bake at 350 for 10-12 min until firmer, but not cooked through.

While that is baking, melt caramels and heavy whipping cream in another mixing bowl on top of the double boiler system until smooth and all caramels are melted. {If you can’t find soft caramels, you can substitute Creamy Caramel Dip for the caramels and whipping cream.}  Let cool for a few min.

Add Caramel and Chocolate Chips

Take first layer of brownies out of oven and spread caramel sauce over the first layer. Add the chocolate chips evenly on top of the caramel layer.

Spoon the rest of the brownie mixture on top of the chocolate chips as evenly as you can. The brownie mixture will spread out while baking.

Bake for another 20 min at 350. Let cool and serve. I like to put it in the refrigerator so the caramel and the chocolate chips firm up more.
