Skillet Pumpkin Cornbread is super rich and dense. It can easily be a dessert or a great side with your traditional Thanksgiving Turkey!

Cornbread is a staple at the table for Thanksgiving. It may be used as the base for Turkey dressing or in my husband’s aunt’s best ever Cornbread Casserole! This year, I decided to try adding pumpkin (because I love everything Pumpkin this time of year!) to our cornbread.

 

But, because we are busy with three little ones and lots of family to visit, I use a few shortcuts with my Thanksgiving sides. For this one, I use a premade cornbread box mix. I really love my cornbread sweet and this box mix is the best.

When I was young, my parents usually made cornbread muffins. But, when my husband and I were dating, he introduced me to making cornbread in the skillet. If you haven’t made skillet cornbread, you really should. The skillet makes it more rustic and makes the edges really crispy while keeping the inside soft and creamy.

Naturally, I had to use the skillet for this recipe and it did not disappoint! The spiced pepitas add another crunchy, salty element. Crispy edges with a rich, dense inside, this cornbread will be a favorite at your next Thanksgiving or holiday gathering.

Skillet Pumpkin Cornbread with Spiced Pepitas

Pumpkin Cornbread:

2 8.5 oz. boxes of cornbread mix (I like Jiffy because it is so sweet)
2/3 c. milk
8 oz. cream cheese, room temperature
1 15 oz. can of pumpkin puree
3 Tbsp. melted butter + 1 Tbsp. melted butter for skillet
2 Tbsp. honey
1 tsp. pumpkin pie spice
1/2 tsp. cinnamon

For Spiced Pepitas:

1/2 c. roasted, salted pepitas
2 Tbsp. vegetable oil
1 Tbsp. brown sugar
1/4 tsp. cinnamon
1/8 tsp. all spice
1/8 tsp. nutmeg
1/4 tsp. cayenne pepper, optional

Recipe Directions for Spiced Pepitas

  1. Preheat oven to 350.
  2. Cover a small sheet pan with parchment paper. Spread out pepitas on parchment paper in an even, thin layer. Bake at 350 for 5-8 min.
  3. While baking, in a medium bowl, combine vegetable oil, brown sugar, cinnamon, nutmeg, all spice and cayenne pepper.
  4. Add pepitas to spice mixture and stir to coat pepitas. Set aside.

Recipe Directions for Skillet Pumpkin Cornbread

  1. Preheat oven to 400
  2. Prepare an 8″ iron skillet by brushing with 1 Tbsp. melted butter.
  3. In a medium bowl, whisk together pumpkin puree, cream cheese, honey, milk, melted butter, cinnamon and pumpkin pie spice until light and fluffy.
  4. Add in cornbread mix and whisk until combined.
  5. Pour mixture into skillet. Top with a liberal amount of spiced pepitas (it is ok if you have some leftover, they are great for snacking!).
  6. Bake at 400 for 40 minutes or until a toothpick inserted comes out clean.
