Slow Cooker Apple Cider Pork Loin makes a deliciously sweet and flavorful dinner that is sure to please even your pickiest eaters!
I grew up in the country here in Texas. I know everyone not from Texas thinks that all of the state is country, but the town I grew up isn’t even well known to people who live in Texas. With a population of less than 3,000, why would it be? It is country there, and oh so beautiful.
My parents still live there and have a piece of land we love to visit in the fall. The kids love exploring for signs of wild animals and picking up “cool” rocks and sticks. We can spend an entire afternoon exploring that place.
And in the fall, nothing is more comforting than returning back to the house with a delicious slow cooker meal and the aromas of fall spices. Apples, cinnamon, sugar and pork makes for an amazing, hearty autumn meal. I love this Apple Cider Pork Loin with Sweet Potatoes and how it warms our chilled bodies after a long day of exploring!
Slow Cooker Apple Cider Pork Loin with Sweet Potatoes
1 4-5 lb. Pork Loin
2-3 medium sweet potatoes, peeled and diced
1 large apple, sliced
1/4 c. Olive Oil
3 Tbsp. Apple Cider
2 Tbsp. Brown Sugar
1 tsp. cinnamon
1/2 tsp. cayenne pepper
1 tsp. salt
Make slits in the top of the pork loin and insert sliced apples.
Add sweet potatoes, apples and apple cider to bottom of slow cooker.
Combine brown sugar and other spices.
Place pork loin on top of apples and sweet potatoes. Rub top with brown sugar spice mixture. Pour oil over top of pork loin.
Cook on low for 4-6 hours.
Serve with a side salad and some warm bread, like this Garlic Parmesan Bread.

- Combine all ingredients into a slow cooker. Cook on Low for 6 hours.
