When my daughter turned 3, I asked her what she would like for breakfast. Her answer was “panpakes, waffle panpakes”. My kids all love breakfast. They would eat it for every meal if I let them.
But, one evening, after a very long, busy day, I had an idea to use the waffle iron to make grilled cheese sandwiches. I was having trouble getting them to eat their soup and asked them if they would eat the soup with a waffle sandwich (who needs a panini maker??). Of course, their little faces just lit up like I told them Santa was coming. They started dancing in their chairs and yelling excitedly (it’s the little things in life).
I made them a simple grilled cheese sandwich using our waffle iron, and they both ate it all gone along with their soup. Since then, I use the waffle iron regularly to make different grilled sandwiches for dinner.
I love these because they are simple, clean up is a breeze and you can put any toppings on them that you like. Everyone can have their own sandwich.
Waffle Iron Grilled Sandwiches
Butter one side of each slice of bread. Place buttered side down on a preheated waffle iron. Top with your favorite sandwich fixins (suggestions below). Place second slice of bread with buttered side up. Close waffle iron. Cook for 4-6 min or until browned. Remove from waffle iron and serve immediately. Repeat.
As part of your preparation, butter one side of each slice of bread for all the pieces you plan to use. Then, place the buttered sides together and place on a plate while you’re waiting for the waffle iron to heat.
With the buttered side of 2 pieces together, you can spread any fixin’s on the bread without getting butter on your hands. Just hold the un-buttered side of the bottom piece of bread in your hand, while spreading your condiment on the top un-buttered side.
Be sure to spray your waffle iron with cooking spray before each sandwich.
If you have any cheese leftover on the grill, it will usually come off easily with a knife. But, if you are worried about the transfer of cheese to your waffle iron, just use two pieces of aluminum foil on the top and the bottom of the sandwich. You will still get the waffle grill marks without the mess.
Waffle Iron Grilled Sandwich Ideas
Apple and Cheddar
Sprinkle cheddar cheese on top of first slice. Add thinly sliced apples. This would be delicious with a hearty stew, like my slow cooker beef stew.
Banana and Peanut Butter
Spread peanut butter on one slice of bread. Add sliced banana.
BBQ Rotisserie Chicken and Cheddar
What a great way to use up leftover rotisserie chicken! Spread barbecue sauce on one side. Top with chicken and cheddar.
This is my favorite! I used provolone, turkey and thinly sliced tomato with pesto spread on one slice of bread.
Ham and American Cheese
Obviously, this was my kids favorite!
Nutella and Pear
A delicious, dessert-style grilled sandwich. Spread Nutella on one slice of bread. Top with Pear and the other slice of bread. Dust with powder sugar after grilling.
